I am attempting salad in a jar. I have wanted to do this since I first saw the idea floating around on Pinterest, but I never did. That was years ago. That should tell you how lazy I am when it comes to doing things I plan to do.

But I finally decided to buy the jars & all of the ingredients some random blog told me I should get. I like these vegetables separately, but will they taste good together? I bought a package of twelve jars. Twelve doesn't sound like a lot but it is & now I kinda wish I had found a package of less jars. I had to rearrange my cabinets to make room for the jars.

I don't understand how people have such clean spaces while they're prepping/cooking meals. My space isn't neat & clean until I am done making whatever I am making.

I used more ingredients for the salad than mentioned because the jar was bigger & needed more vegetables to top the dressing so that nothing else could fall down towards the dressing. But, I suppose more calories consumed by veggies/chicken is far better than eating pizza or some crappy sandwich. I also used regular onions instead of red onions because I forgot to buy a red onion. Oh, well.


RECIPE

Balsamic Vinaigrette

3 tablespoon olive oil
1 tablespoon balsamic vinegar
1-2 tablespoon water
2 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon pepper

 

Salad

spinach leaves
1 cup chicken
1 cup cherry tomatoes
1 cup mushrooms
1/4 cup onions
1/4 cup green bell peppers

Directions:

layer the ingredients starting with the dressing at the bottom. Top the dressing with onions, bell pepper, mushrooms, cherry tomatoes, chicken, then spinach leaves. Make sure you do not let the greens touch the dressing. This is supposed to help your salads last a little bit longer in the fridge.
