I am attempting salad in a jar. I have wanted to do this since I first saw the idea floating around on Pinterest, but I never did. That was years ago. That should tell you how lazy I am when it comes to doing things I plan to do.

But I finally decided to buy the jars & all of the ingredients some random blog told me I should get. I like these vegetables separately, but will they taste good together? I bought a package of twelve jars. Twelve doesn't sound like a lot but it is & now I kinda wish I had found a package of less jars. I had to rearrange my cabinets to make room for the jars.

I don't understand how people have such clean spaces while they're prepping/cooking meals. My space isn't neat & clean until I am done making whatever I am making.

I used more ingredients for the salad than mentioned because the jar was bigger & needed more vegetables to top the dressing so that nothing else could fall down towards the dressing. But, I suppose more calories consumed by veggies/chicken is far better than eating pizza or some crappy sandwich. I also used regular onions instead of red onions because I forgot to buy a red onion. Oh, well.


RECIPE

Balsamic Vinaigrette

3 tablespoon olive oil
1 tablespoon balsamic vinegar
1-2 tablespoon water
2 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon pepper

 

Salad

spinach leaves
1 cup chicken
1 cup cherry tomatoes
1 cup mushrooms
1/4 cup onions
1/4 cup green bell peppers

Directions:

layer the ingredients starting with the dressing at the bottom. Top the dressing with onions, bell pepper, mushrooms, cherry tomatoes, chicken, then spinach leaves. Make sure you do not let the greens touch the dressing. This is supposed to help your salads last a little bit longer in the fridge.

red bud isle

Bee invited me along on her engagement shoot at Red Bud Isle. I decided to take some behind the scenes photos for fun. The location was so pretty. It's a woodsy off leash dog park where you can hike. There were also people canoeing & kayaking. The parking is a bit insane. When we were leaving, there were five cars lined up waiting for a parking space. So, basically, you have to be lucky to get parking.

instagram update.

I have decided to separate my photography & personal pictures on Instagram so now I have two accounts. Well, three, but the third account is for memes & celebrities. lol. I just felt like I was following too many people that I didn't care about & too many people were following me that didn't seem genuine. I just wanted to start fresh on my photography account. For my personal account, I just went back to the account I have had since 2012. Also, when you follow hundreds or thousands of people, you do not see everything they post. So, by separating everyone into three categories, I can, hopefully, see more of what people post. And I am sure there are some people who only want to see my photography work & not my personal/fitness photos. So, there's that.

favorite of 2017

I didn't take a whole lot of personal pictures this year. I tried to respect Christian's wishes of not having his picture taken with the big camera. Hopefully, that changes in 2018 though because I neeed more pictures in my life! I am geninely excited for 2018 because I am feeling inspired to pick up my camera & create weird & beautiful images.

the werewolf, slenderman, & the creepy ass clown

These were taken in October 2015. I was living in Sanderson at the time & I decided to have a little photo shoot with of my son & nephews. Aiden was the werewolf, Christian was Slenderman, & Javi was a creepy ass clown. Javi was the one most into the shoot & did amazing being the creepy ass clown.

Sadly, my nephews are a billion miles away & I won't get to take pictures of them this year. Christian is wanting to dress up as something scary this year & I am super excited for that photo shoot.
